Are you hearing more and more about "newly" discovered Chia?  Most people are aware that this superfood has need known about for 1000s for years.  The Aztecs where the first to benefit from Chia seeds.  The Aztecs valued used chia for energy and endurance for hunting. The Spanish conquistador considered raw chia seeds to be a sacred food.

Many have come to recognize the health benefits of flax seeds. Chia can be considered a higher quality when compared to flaxseed.  Chia seeds have more antioxidants than flax. These superfood seeds are more beneficial than a piece of salmon with high levels of omega-3 & 6. Chia seeds also taste better and are easier to incorporate into your everyday diet.  A quick way to cook or drink chia is to create a gel.

How to Create Chia Gel

Grab a small amount of raw chia seeds.  Place them in a liquid like water, orange juice or even scrambled eggs before you cook them.  Let them soak for 30 minutes and they will soften and form a gel.  This same process will happen naturally if you digest them before soaking the seeds.  This gel forms a protective barrier between carbohydrates and the digestive enzymes and is an effective way of slowing down the transformation from carbohydrates into sugar.

Apart from the fact that this is obviously a benefit to diabetics the slowing down of converting carbohydrate into sugar offers the ability to create long endurance. Because carbohydrates fuel our bodies, prolonging the conversion into sugar creates longer lasting and much more stable energy levels.

Are there benefits of Flax vs. Chia?

Flaxseed does have some downsides like long term storage.  The main difference between Flax and Chia seeds are the levels of antioxidants in them.
